Remove the solid stalk end and the outer leaves and cut the chicory in thin slices. Slice the tomato in 8 pieces. Wash and dry the spinach. Cut the lime in half and squeeze one half into a bowl.
Add the finely chopped garlic, olive oil, salt and pepper and mix. Now add the peeled prawns. Consequently wok the prawns with the marinade for about 5 minutes. In a seperate bowl make a dressing with the chili sauce, crème fraiche and mayonnaise
Make up the plates with the spinach, chicory, tomatoes and add the dressing. Add the prawns, lime parts and sprinkle with fresh coriander. Delicious with French bread, grilled fish ! Enjoy
